Join ACES at Rock Bottom Ranch for an evening celebrating local and sustainable agriculture! Guests will enjoy a multi-course feast of small bites, plated dishes, and regional beer, wine, and cocktails. Each Farm to Table Dinner includes a guided farm tour and the opportunity to engage with our regenerative agriculture systems and the seasonal rhythm of the farm.

Donor Circles’ member priority registration for Farm to Table Dinners begins at 9am on Thursday, May 8. Member registration begins at 9 am on Thursday, May 15. If you are not an ACES member, we hope you will join or renew your membership today. 

The maximum number of tickets is six (6). Due to limited capacity, members are only allowed to purchase tickets to ONE (1) Farm to Table Dinner. Members are asked to attend only ONE (1) dinner per summer so that more members have the opportunity to also experience these special evenings. Our Farm to Table dinners showcase the best of what is in season at the ranch and in our region. We curate the menu accordingly. Our facilities do not have the capacity to offer an array of options and therefore cannot accommodate all dietary restrictions. We can accommodate gluten and vegetarian dietary restrictions with advance notice.

The Farmer and Chef: A proud Colorado native, Chef Joey earned his culinary degree at Johnson and Wales University in 2011 and since worked at a variety of establishments including golf courses, country clubs, fine dining and casual restaurants, resorts, and convention hotels. His varied experience of restaurants, hotels, and clubs gives Chef Joey a complete understanding of the hospitality industry, guest relations, and strong leadership skills. In 2020, Chef Joey moved to the Roaring Fork Valley and soon after started The Farmer & Chef- a culinary concept house, dedicated to celebrating the flavors of the mountains whilst supporting and empowering local sustainable farming practices through excellent hospitality. His new restaurant, Origin, serves incredible and locally sourced brunch in Aspen Colorado. Chef Joey’s endless curiosity and insistence on perfection drives Chef Joey to create simple, delicious food prepared with care and intention. 

Chef Emily Oyer: Chef Emily Oyer is a Virginia Beach native who moved to the Valley in 2019. Recently crowned champion on Food Network’s “Beat Bobby Flay,” Chef Emily brings her award-winning culinary expertise to the valley. She has been featured on Food Network multiple times and has worked alongside world-renowned chefs, bringing her innovative vision to every dish.

Field 2 Fork Kitchen: At Field 2 Fork Kitchen we strive to connect our community through food. With over 20 years of experience, we create memorable events that bring people together and wholesome dishes made with the best ingredients. By working directly with regional farmers that pour pride and handwork into their craft, we design custom menus that highlight vibrant local flavors to bring a unique dining experience filled with organic, sustainable food.
