Autumn Eklund
Livestock Apprentice
From Minneapolis, Minnesota, Autumn has a background in hospitality, studies herbal medicine and strives to eat as locally as possible. She met a local farmer who introduced her to regenerative agriculture, and inspired her to get into farming. She found her first farm gig through her connections, and fell in love with working with livestock. Autumn has been working part time on a regenerative practicing livestock farm north of the city, while also working at a farm to table restaurant in Saint Paul since 2024.
She is participating in the ACES livestock farmer apprenticeship in hopes to gain skills and understanding of the operations of running a regenerative practicing operation. She is as passionate about agriculture as she is hospitality and hopes to continue on a career that can marry the two passions.
